Chocolate Pumpkin Protein Muffins

  • 1/2 cup Splenda Brown Sugar Blend
  • 1/2 cup unsweetened applesauce
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 1/2 tsp ground ginger
  • 2 tsp ground cinnamon
  • 1/2 tsp salt
  • 2 tsp vanilla extract
  • 15 oz can raw pumpkin
  • 4 large egg whites
  • 2 packets of Lean Body for Her (other chocolate protein can be used)
  • 2 cups oat flour
  • 1/2 cup unsweetened almond milk
  • 1/2 cup chopped walnuts (optional)
  1. Preheat oven to 350 and line muffin tin with liners and non stick cooking spray
  2. Combine all ingredients no specific order except for walnuts
  3. Pour batter into muffin tins, top with walnuts, and bake for 17-20 minutes
This made 24 muffins plus a bread loaf pan.  I just poured the extra batter in the loaf pan and baked until done.
